Chicken and pineapple salad

This is something my daughter couldn't get enough of. Simple, fast and you can use some leftovers from lunch. Here is this brilliant recipe details:

- chicken breast
- 100g of boiled rice
- can of pineapple chunks
- small can of corn
- leeks
- mayo and/or natural yogurt
- salt and pepper to taste.

I fried chicken breast with my family favourite spices and cut it in small pieces. I throw all the pineapple, corn and chopped leaks into a big glass bowl together with chicken and boiled and cooled rice. Add mayo and/or yogurt and season with salt and pepper. For some extra colour you can add red pepper. Mix well and let it stand in the fridge for at least an hour to get the best flavour.

Healthy, yummy and all that kids usually like! You may want to make a bit more to have something left for the next day lunch box.
